«The Caucasus – ancient traditions and a complex history»

Ведущий 1: The Caucasus is a land of ploughmen and cattle-breeders, skilled craftsmen, fearless warriors and loyal women, faithful to their husbands and hearths.

Ведущий 2: If you ask the average Russian to name things associated with the Caucasus, the list would probably look something like this: mountains, snow, war, Dzhigit, hill people, Islam, cuisine, hospitality and vacation.

Ведущий 1: This sequence is fairly accurate, but limited, for in the Caucasus, each of these elements is larger-than-life.

Ведущий 2: And today we suggest you to go on an exciting trip through the Caucasus.

Armenia

The full name of the country is The Republic of Armenia. The  capital is the city Yerevan since 1920. Armenia is divided into 10 provinces.  The state is located in the western Asia, it has no exit to seas. Armenia is a highland, the most part of which is within the limits of the Armenian uplands. It is the country with the great culture. In spite of Armenia is not so big country, it contains an improbable beauty architectural constructions and landscapes.

Georgia

 Georgia - the country of interesting history and culture. Its special geographical location justify the cultural identity that distinguish Georgia from other countries. On the one hand it is at the crossroads of Europe and Asia, and at the same time, Georgia occupies a central place in the Caucasus between the Black and Caspian Seas, where it has always played a significant role. All historic regions of Georgia unites the rich history and unique cultural heritage, the variety of recipes and widely known of all Caucasians, hospitality - all these features for centuries was admired and still admire visitors to Georgia.

Azerbaijan

Azerbaijan, also known as the Land of Fire, is a country with a fascinating history and unique cultural heritage. Historically, the country has been both a Soviet Republic and a part of Persia. The country regained its independence from the Soviet Union in 1991, and modern Azerbaijan has emerged as a Western-looking, independent, secular state with a vibrant and diverse culture.

Dagestan

Dagestan is a region located in Russia’s North Caucuses, with the Caspian Sea to the east. Dagestan is quite diverse. It is home to dozens of different peoples and languages. Islam is the dominant religion in Dagestan. Today, Dagestan is riddled with poverty, organized crime, and radical Islamic militant groups, a sad transition from the proud culture of centuries past.

Ossetia

Ossetia – one of the oldest cradles of Christianity. Every man of Ossetia was a warrior, a farmer and a shepherd at the same time. And every woman was (and still is) a housewife. North Ossetia-Alania is one of the sovereign republics of Russian Federation. Eight districts of the Republic are primarily engaged in agriculture, cattle breeding and the processing of produce. North Ossetia is a unique country for mountain sheep and goat breeding. The beauty of North Ossetian mountains attracts tourists from many countries, for they have the opportunity of hunting, mountain climbing, trekking and skiing.

Chechnya

Chechnya, a region of Russia more than 1,000 miles south of Moscow. The population is made up mostly of Sunni Muslims and Russian Orthodox Christians. Chechnya is famous for its mountains, the site of several major battles in Chechen history. The climate is continental. There are about fifty state monuments of nature in the region. Picturesque mountain scenery and lakes are of interest to travelers and tourists. Stone towers rising above mountain villages are one of the main attractions of the mountainous part of the Chechen Republic.

Ведущий 1: Hospitality is one of the most important national traditions of the Caucasus.

Ведущий 2: National cuisine is the wisdom of nation, its pride and treasure. No wonder, it has been stored for centuries.

Ведущий 1: Nowadays you can find real hospitality in every house. A  hosting family is always ready to share the last piece of bread with you.

Ведущий 2: Now we will show you how to prepare the Caucasian national dish - Ossetian pies.

1 повар: we need flour, oil, milk, salt, and water.

2 повар: mix one teaspoon flour, one teaspoon yeast, one teaspoon sugar, and 100 gramms of warm water.

3 повар: take Ossetian feta cheese

1 повар: we will need an aryng.

2 повар: take six cups of  white flour, add some salt.

3 повар: Pour the ankhizhan into the large bowl of flour.

1 повар: Adding warm water or milk, start mixing it from the centre. Important: mix by hand. When it stops sticking to your hands, add an egg. 

2 повар: It will taste better if you add 100 g of milk. 

3 повар: Dough is ready. If you add 30 g of vegetable oil it will be not that sticky.

1 повар: Now cover the dough with plastic wrap and let it rise for a few hours. 

2 повар: It is time to prepare the filling. Let's make pies with beet tops and cheese.

3 повар: We can also use dill, parsley and onions

1 повар: Cut leaves into very small pieces. Same with other ingredients.

2 повар: The dough has risen! It is time to form the pies. The dough balls for three pies.

3 повар: Add 500 gr. of fresh Ossetian cheese.

1 повар: Put some filling on the   centre. Connect them and cut the top off. 

2 повар: Put the pie in the oven and bake it.

3 повар: After you take the pie out, use a stick of butter to make the top and sides soft.

1 повар: We have  finished cooking  and ready to put the table. Can we ask your permission to start the feast?

Ведущий 1: One of the most interesting traditions of the Caucasus, is the wedding.

Ведущий 2: All details of the wedding are planned from the birth of a child. A dowry is prepared for the children and savings are put aside. Once the joyful day arrives, it is a like a true fairytale.

Ведущий 1: It is common to hold two weddings, the first of which takes place in the bride's home, the second of which is held in the groom's home.

Ведущий 2: In the past, the  wedding was practised with a kidnapping of the bride. The "kidnapping" was always carried out with the bride's permission.

Ведущий 1: The real highlight of Caucasian bride's wedding was the entry into the territory of the groom's house. The girl completely hides the face to avoid the evil eye and evil spirits that could not disturb the new family.

Ведущий 2: Caucasian bride - is a model of beauty, modesty, innocence. The girl who marries in the tradition of the highlanders, during the celebration should be quiet, almost no talk, eat and drink a little.

Ведущий 1: A wedding in the Caucasus, as a rule, often accompanied by a cheerful, energetic live music, guests are eating, singing, dancing folk dances, foremost among which is lezginka.

Ведущий 2: This is a fast dance Caucasian people, which is sure to at least once, but will dance celebration guest - a man acts as an eagle, a woman - as a swan.
