Introduction

French cuisine is a cuisine of France. Conditionally can be divided into two main branches - regional folk and refined aristocratic.
The regional cuisine dishes for centuries were prepared by the inhabitants of various historical regions of the country. Aristocratic French cuisine was formed at the court of Bourbon, when Paris has become the trendsetter in the world of fashion. Its unique dishes are marked by diversity and refinement.

2.The French tradition

Traditional French meal might begin with snacks (hot or cold starters, if we are talking about lunch), followed by soup, and followed by a main course, salad and cheese. End your meal serves as a dessert or fruit.
The main appetizer is cheese, of which there are more than 200 varieties. In France it was used in such food as a soup with clear broth. Special pride is French wine, e.g.  Kings of French wines of Bordeaux and Burgundy. Also a world famous cognac is popular there.

3. The use of frogs for food.

For the French stuck insulting nickname «frogs» due to the use of their eating frog legs, but this dish is rather a delicacy, and not daily meals, and served not in all restaurants. France is the largest importer of frogs from Asian countries for their consumption.

4.Provence Cuisine.

Provence cuisine is marked by consumption of large quantities of herbs, spices, tomatoes, pepper, eggplants, garlic and olive oil. Of this area is famous Bouillabaisse, served with spicy garlic sauce «Rui».

5 . French cuisine

5.1.  French Goulash

Preparation:
Chop the bacon, fry, then in the same fat fry the meat. Put it in fat the garlic, onion, fry all this, then pour a glass of water, to boil. Meat with garlic and onions, put in a saucepan, add olives, thyme and raisins, boil, pouring wine. Add the cream, cognac, salt, and simmer for twenty minutes.

5.2. French Cod

Preparation:
Cook the carrots and potatoes, cut onions, pepper. Salt the fish, cut, pour lemon juice.
Put foil in the form of vegetables, fish and thyme, pour the wine and cream, close the foil and bake for 15 minutes.

5.3 French cheese dessert with BlackBerry sauce

Use electric mixer, beat well ricotta cheese, sour cream, powdered sugar, vanilla and half the lemon juice. Wipe the mass through a sieve to remove all the lumps. Cover the 6 small molds gauze and place them in the cheese mass, lightly press and refrigerate for 4 hours.
Mash half of berries with sugar and then add a whole berries and remaining lemon juice. Mix well and leave for 20 minutes. Turn cheese hearts on serving plates and carefully remove the gauze. Let stand at room temperature for 20 minutes, pour berry sauce and serve.

6. Conclusion
FRENCH CUISINE is considered treasure, and special French philosophy. In France appeared and perfected many of the fundamental concepts of modern cooking. By the way, you can often read that the French are gourmets. In the French language, this word means simply excessive addiction to food. For anyone who delves in particular flavors, savoring the sensations and technology savvy cooking, there is a special word -- gourmet.

   American food is definitely multinational, just like its population. People from other countries when arriving to the USA brought with them their national recipes. Most of Americans don't eat home but prefer to go to restaurants. They can choose from many kinds of restaurants.  So, now all American food is partly Italian, partly Greek, partly Jewish, partly Chinese, partly French, etc. Very often traditional American food is associated with fast food, including hamburgers, French fries, hot dogs, pizzas and some other quick and easy-made dishes. The recipe of Hot dogs was taken from Germany.  Sausages in hot dogs were similar to Basset and called Dachshund. The American who brought this recipe forgot the German name and called hot dogs. Another American tradition involves salad bars .Many restaurants offer them to their visitors. The main rule of salad bars is to pay one price and eat as much as you want. Such national celebrations as Thanksgiving and Christmas many families are followed by roast turkey or stuffed duck. Another traditional American food is doughnuts. However, they were brought to the USA by Dutch immigrants in the nineteenth century. One can find all sorts of doughnuts in American cafes. The Coca-Cola story began in Atlanta in 1886. John Pemberton invented a new drink. Two of the ingredients were the South American coca leaf and the African cola nut. Pemberton couldn't think of a good name for the drink. Finally, Dr. Pemberton's partner Frank Robinson suggested the name Coca-Cola. Thirty years later the famous Coca-Cola bottle design first appeared. For many years only Coca-Cola was made. They only introduced new drinks — Fanta, Sprite in the 1960s. The recipe of Coca-Cola is a secret. Today they sell Coca-Cola in one hundred and ninety five countries. Hundreds of millions of people from Boston to Beijing drink it every day. It has the most famous trademark in the world.

      During the day Americans eat lots of ready-to-cook food. Americans drink a lot of juices and soda, eat much meat, fruits and vegetables, not much bread. However there are some principles of American cuisine (if we may call it so). Americans eat a lot. They have three meals a day: breakfast, lunch and dinner. Breakfasts are usually light, with just a plateful of cereal and a cup of fresh-brewed coffee. Sometimes in the morning Americans have cereal or scrambled eggs, milk or orange juice.       For lunch some families eat fresh salads, sandwiches or tinned soups, which require simply heating. Also they prefer chicken or fish, fried potatoes, vegetable salads and desert.

       Dinner is the most nutritious meal; some people have family dinner when all members of family have to be there. For dinner Americans usually have meat, fried or baked potatoes with ketchup or sour cream, corn, peas, sometimes macaroni and cheese or spaghetti; ice-cream, fruit or cake may be for dessert. Some families order a take-away food, such as pizza, sushi, Chinese food, etc.

Food processing

Food processing is typically a mechanical process that utilizes large mixing, grinding, chopping and emulsifying equipment in the production process. These processes inherently introduce a number of contaminate risks. As a mixing bowl or grinder is used over time the food contact parts will tend to fail and fracture. This type of failure will introduce in to the product stream small to large metal contaminates. Further processing of these metal fragments will result in downstream equipment failure and the risk of ingestion by the consumer.

Food manufactures utilize industrial metal detectors to detect and reject automatically any metal fragment. Large food processors will utilize many metal detectors within the processing stream to both ensure reduced damage to processing machinery as well risk to the consumer. The first industrial level metal detector pioneered by Goring Kerr was introduced back in 1947 for Mars Incorporated.

One of the most important requirements for processed foods is the continuity in expected taste and appearance. That requirement is fulfilled using a single or a specific multiplicity of ingredients. Those ingredients require extended crops or farming of particular species only with consequent detriment of animal and vegetal Species richness and possible Extinction of other less used species. This is a risk with Industrial Food Processing as it is set up today.
