The trend in tea drinking has changed significantly since tea was first discovered almost 4700 years ago. Legends vary on how tea was originally discovered. One involves the Chinese emperor Shen Nung, drinking hot water tainted by leaves while sitting underneath a tea tree. In India, the lore involves Prince Bodhidharma chewing tea leaves in order to stay awake while meditating. From China, tea leaves journeyed to other places such as Japan (729 AD), Europe (16th century) and the American colonies (1765).
Since those times tea drinking in many countries has turned into an art form. The Chinese, Japanese and Koreans have made tea drinking more than just an activity. In cultures such as these, there are several steps before the actual drinking occurs. These include choosing and growing the right kind of tea, brewing the leaves, using the right tea set and selecting the right environment. Each step, including the process of offering and drinking tea, can alter its meaning, purpose and effect on the drinking experience.
In these recent studies, it has been claimed that tea may have anti-cancer properties, it may be able to slow down the spread of HIV in the body, it definitely increases the metabolic rate and mental alertness, and it can also help reduce stress.

In the north of England, the tea goes into the cup, followed by the milk. In the south, it is the other way round. On the Continent you are likely to be served with lemon, and in the East you may find a touch of a spice such as cardamom added.
There are some well known conventions to tea drinking. For example, dipping a biscuit into your cup is considered common, as drinking from the saucer, or blowing on hot tea to cool it.
There is a huge variety of teas available nowadays, both in loose leaf and bag form. Teas from India tend to be strong and dark, while those from China are more delicate and lighter. Earl Grey is pale with a gentle perfume and considered by many to be the most sophisticated cup.
Tea and the rituals that go along with it have travelled the world. From China to Japan, Hong Kong to Russia, and England to the United States. Every country developed individual ceremonies around brewing and serving tea.
Tea ceremonies can be very simple with just tea and a biscuit... or extremely elaborate like they are in Japan, complete with a proper way to warm the pot, fold a tea towel and serve the tea.
